At Al Taza, we fuse authentic Lebanese culinary traditions with modern Indian tastes. We use fresh, Grade-A halal meat, homemade sauces, and never compromise on hygiene.
All our outlets follow strict SOPs including surface sanitization every 2 hours, daily health checks for staff, and the use of food-safe PPE gear. We use food-safe disinfectants and operate open kitchens for complete transparency.
We have limited vegan options. Our Veg rolls, falafel rolls and Soya Shawarma can be customised into vegan options by swapping the mayonnaise for Hummus.Plate options are also available for Falafel and Soya Shawarmas. Please note that while we take reasonable precautions,we cannot completely rule out cross-contamination.

Preparation
The meat is prepared after rigorous checking of the quality of meat we’ve received from our vendors. The meat is then further checked by our team. After this the chicken is washed using RO water, cleaned, and cut for marination. We use natural spices with zero preservatives and additives to make our marinade. The meat is marinated in a vacuum tumbler to ensure even marination and enhanced flavour.
Vegetarian
All aspects of food preparation, including cooking areas, staff, and utensils, are strictly segregated for vegetarian and non-vegetarian items. Dedicated utensils are used for vegetarian and non-vegetarian items, with cutting boards and knives colour-coded to avoid confusion. Breads and buns are coded white, utensils for non-vegetarian items are coded yellow, and those for vegetarian items are coded green.
From our chicken to our pickles everything we use is fresh and high-quality. Our meat is Grade A halal-certified and sourced from ethical farms. The chicken is sourced from FSSAI certified vendors who provide us with export quality chicken. The spice blend used for marination is created by our chef. The spices are bought whole and ground by us before using it to marinate the chicken.The breads and buns used are also prepared fresh every day. The vegetables used in the food we serve are locally sourced from reputed vendors and further washed in chlorinated water, with a concentration of 50 ppm, before proceeding to use it in our shawarmas. Our mayonnaise is made from scratch, every 45 minutes to maintain quality and safety, using pasteurised eggs. All our other sauces like hummus, garlic toum and tahini are also freshly prepared by our team. The pickles served on the side are also properly washed in chlorinated water, with a concentration of 50 ppm before pickling it in 316 anti-corrosive stainless steel containers.
We use Grade-A halal meat at Al Taza. The quality standards are maintained by sourcing our chicken from FSSAI certified vendors and further double-checking the meat after receiving it. As far as transportation and storage is concerned, meat is stored and transported in cold rooms and temperature controlled vehicles respectively, at a temperature below 4 degrees celsius. If the temperature regulations of the transported meat are not below 4 degrees celsius the chicken is sent back to the vendor. Marinated meat is also transported in temperature controlled vehicles from our central kitchen to all our outlets.
We use export quality chicken, where third party audits are conducted strictly. Chicken is procured only from FSSAI certified vendors who operate under continuous supervision by certified veterinary doctors. Proper health and hygiene checks are consistently carried out at every stage. Beyond this, our team also double-checks the quality by sending the chicken to external laboratories that are NABL accredited . Storing and transportation of chicken is done in cold rooms and temperature controlled vehicles respectively, at a temperature below 4 degrees celsius. Furthermore, inspection is done by our team, who check whether the packets are intact and do extensive physical analysis before receiving the chicken from the vendors. The chicken is then again checked before the marination process.
All aspects of food preparation, including cooking areas, staff, and utensils, are done with utmost care, caution, and hygiene at Al Taza. The staff handling the food are required to wear their Personal Protective Equipment as long as they are in direct contact with the food. Furthermore, sanitations of the cooking stations are done multiple times a day. We use only fresh ingredients to prepare our food, which includes not just the chicken but also our mayonnaise, other sauces and dips, pickles, and breads.
Food safety is a core priority for us. We are FSSAI certified and our team holds Four Star Food Safety Training certification, ensuring compliance with the highest food safety standards. All utensils are thoroughly cleaned and properly sanitized before and after use, and our staff undergo specialised training in safe food handling practices. We use appropriate sanitary equipment and enforce the use of personal protective equipment (PPE) at all stages of food preparation and service to maintain strict hygiene and ensure customer safety.
